Given that Elizabeth was from Transylvania, and that she allegedly used the blood of the young women she "killed" as a rejuvenation treatment, it's probably no wonder that, retroactively, she became known as "Countess Dracula" (and was the subject of at least one film under that name).
The one I used and found most helpful was Countess Dracula: The Life and Times of Elisabeth Bathory, the Blood Countess by Tony Thorne. It's out of print, though. Shelley Puhak is working on a new biography which I can't wait to read, but it's not out yet.

Yeah it’s pretty clear how that part of her legend got going.
